The brisket turned out pretty good anyway. The bottom 1/8" was a little crispy but the rest of the brisket turned out awesome. Instead of doing dinner, everyone was able to come over for lunch. Snapped these photos before the entire thing was hoovered up.
Just smoked a 20 lb. brisket on GMG Daniel Boone. Members of this community have helped me learn techniques and things to watch out for. One of the best bits of advice was to get an Inkbird wifi thermometer so I know what the actual temp is inside my cook chamber.

We're located in Sonoma but will be moving to Oregon next month. Looking for an offset approximately 48" long with smoke stack centered. Need it to be around 1/4" thick.

Welcome! Once you get your smoker built, you have some of the world's best wine to go with your BBQ. I've had some Pinot Noir and Syrah from NZ that is out of this world.
On a side note, my understanding about good airflow is you want your smoke stack attached right in the center of the end...

Looking for recommendations for a backyard offset smoker as well. I live in Sonoma and can only seem to find offset smokers at Lowe's and Home Depot. The brands they carry are Oklahoma Joe's and a few Horizon smokers.
Anyone have suggestions about the best offset in Northern California?
Nice! That's exactly how I do my Tri Tips as well. I do 2 hours at 225° and then get my gas grill rip roarin' hot. Then I sear the Tri Tip for 2-3 minutes each side then let it rest. Great technique.
I too have a Green Mountain Grill and have also smoked 6 briskets. Half were done fat side up and the other half fat side down. After the last one I had an epiphany. The pellet smokers use convection heat, which is different than the heat generated by an offset wood smoker.

Wondering if anyone else with a pellet smoker sees any differences between cook times and temps for pellet grills when trying to replicate a recipe cooked on an indirect wood smoker. In an oven, convection cooking takes less time than standard cooking. If the same principal holds true with...
There's a few threads on everyone's personal faves. I use the probe on the GMG which alerts me on my phone when it reaches a defined temp. I also use a ThermoPro wifi thermostat that sits on the grate.
