I've never removed the eyeballs. I just cover the head and ears with foil to prevent them from getting to dark. That hog you have pictured looks ready to cook aside from some clean up trimming and washing. You also seem to have other essentials ready to go. Enjoy and have fun with it. Looking...
I know I'm a little late to the party, but when it comes to sauces and rubs, it's really hard to beat Jeff's. It's my main go to when I have ample time to mix it all up. But when I don't, I use Big Swedes rubs and seasonings. They run a close second to Jeff's.
I think its a good idea to have a lip at the bottom between the FB and CC to prevent grease oil fat running into the FB and starting a fire in the CC. Just my $.02. Maybe a cap for the stack too, to keep undesirables out (rain, bugs, etc.)Very nice score, looks like it's built to last.
Anyone know of a local supply of competition rubs or injections? I'm looking for something besides the typical grocery store brands. I really like the "Our Butts are Kickin' brand as well as the Killer Hogs brand. I like it spicy, so don't be skeered. I know I can make my own, but for small...

You got that right. There will be a piece of redwood between the two horse shoe handles to help insulate. I know wood isn't the preferred choice, but this will be under shelter so rot shouldn't be an issue. For some reason, the main door warped substantially when I cut it out with my plasma...
Here is an update on my build. It is my first build, and has definitely been a learning experience. It uses tuning plates for heat/ smoke distribution and has a warming plate on top of the burner box to keep things warm. It isn't quite finished yet, so
I'll be posting more when it gets...
I would suggest making a template of the smaller tank out of cardboard. Then transfer it to the larger tank. This should get you fairly close, minimize fitting time, and give you a look on where to position it.
My name is Kevin. I am 45 and live in sunny Phoenix Az., just north of Hades. I am a native here, but I grew up in Southwest Nebraska where I processed all of my own game and meat. I used to use the, forgive me smoke gods, the artificial smoke flavor. But I was young and dumb so to say. ...
