    First Pit Barrel

What thirdeye said. I've been cooking UDS for the last 14 years and you're going to want put a thermometer somewhere near the middle of the drum, and preferably something electronic. I don't know the Pit Barrel very well, but I finally added diffuser to mine and that completely changed the...

    Pork Butts

My wife and M-I-L are constantly watching for sales and I don't believe they've ever paid even $1.50/lb for Boston butt. They'll buy 2 or 3 at once, freeze them, and then we'll use them for whatever event comes up. Please, don't ever pay for full price for Boston butt, the grocery stores run...

    Labour Day Weekend 2024

Had a couple of Birthdays to celebrate aside from it being Labor Day Weekend. The M-I-L asked for pulled pork (pictured) and I chose a tri-tip roast. I forgot to snap a photo of the tri-tip, was in a hurry to get everything packed up in the cooler to transport over to my in-laws. Both tasted...

I'm finally finished and just in time for the big smoke....

I highly recommend Thermoworks and that Billows, I don't have anything to compare it to, but it seems like Thermoworks thought of everything with that Signals brain box of theirs. They've got a QR code in a short set of instructions in the box, and it brings you to a selection of videos to...

I'm finally finished and just in time for the big smoke....

I meant to snap a photo, but forgot in the heat of the moment, almost literally. I was under the gun to get them finished up, foiled, in the cooler, and showered before heading over to the in-laws. They came out awesome, everybody was raving about it!

I'm finally finished and just in time for the big smoke....

Well, I finally finished my "Mona Lisa," also known as my most recent UDS build and not a moment too soon. I've got to smoke two huge Boston butts tomorrow night and this will be first true test right out of the gate. I've built a UDS in the past, but this is my first attempt at a "high tech"...

PID & Fan Recommendations For UDS Build

Huge amount of information, actually. Thank you!

PID & Fan Recommendations For UDS Build

Hello All, I finally burnt through my old UDS drum after 13 years of faithful service, and now I need to make some decisions before I start making holes in the replacement drum. The decision is "to PID, or not to PID," that is the question. I really think that I would like to try it, just...

Pictures Of Your UDS Heat Diffusers

Hello All, I'm starting a new UDS build and I'm wanting to install a heat diffuser as part of it. I've been reading that folks have been using 16" pizza pans for this, do any of you have pictures available of the hole pattern that you drilled on your pizza pans? I was looking at the fancy...

    UDS Finally Burnt Through

The Mrs. was out that way a few weeks ago picking up a horse, wish I had known, oh well. I would invest more in the gas to come and grab a free one from you, than to pay $30 to the guy the next town over. Thank you though, very thoughtful!

    UDS Finally Burnt Through

Here I was, thinking that people were going to have me spending the big bucks, but you guys sure did a good job at selling the UDS. Those who commented are all correct, I am very familiar with them and mine has made some mighty fine tasting food. That and they are cheap, no doubt about it. My...

    UDS Finally Burnt Through

I had heard that the 22's have a hard time getting under 275, is that true?

    UDS Finally Burnt Through

No, no heat diffuser is being used. That being said, what are you guys using for a diffuser? Just a piece of sheet metal? Thanks!

    UDS Finally Burnt Through

Oh, I'm sure, I just love spending other people's money for them! Anyway, that's an excellent question. I've thought about a Weber 18" Smokey Mountain, but I've also been thinking about a reverse flow off-set, like a Lang or something similar. My hesitation with the Lang, aside from cost, is...

    UDS Finally Burnt Through

I've been cooking my butts fat side up so that the fat renders down into the meat. It sounds like you're using the fat cap as a heat shield, is that right? If so, and it worked for you, I'll give that a try next time I cook one.
