I've been playing around with indian spices (oh hell ok - I slip some into anything if I think I can get away with it). Gm and turmeric is great in burger. also in a marinate with garlic when doing chicken for kebabs.
look at some of the fattie recipies and incorporate it into the beef/turkey...
The hole on mine is lower down - its level with the rack for the charcoal so I use a large ally pan filled with water which almost covers the top of the hole - but the sides are at a slight angle which forces the heat and smoke down towards the bottom of the chamber. I also added four foil...
nice! you've got it set up almost the same as mine smoker - couldn;t see from the pictures what mods you'd done on the entrance from the firebox - could you elaborate a bit on that.

I...

when you add the cost of the meat, and extras I needed to modify it , the time involved to cook , the beer needed while cooking and everything else then it could turn out...

I'm a noob to the smoking world - but I like to eat and play with fire so it really wasn't much of a leap to join them together!!
Brought up in England were there was much of a smoking/bbq culture. Moved to NH in 2000 and quickly got
proficient with a gas grill – to the...
