    The turkey legs turned out really nice. Basically, I dampened them with water and rubbed them with adobo spice. Got the smoker to 275 and cooked them to 180 degrees (F) internal temp. That took about 2 hours. I wrapped them in foil (individually) and let them rest for 15 minutes.

    I agree on the budget concerns, but my waistline has actually decreased since I got more serious about this hobby. I tend to eat more meaty stuff and less bready stuff.

    (Hand up) yep, this guy too. I bought a bag of lump charcoal and some Pecan chunks. I'm ready. I use a bullet smoker and spatchcock the turkey. It turns out nice.

    Being from Oklahoma originally, Deviled egg potato salad is a must. Cornbread stuffing (not the stove top stuff,) and cranberry sauce. Oh yeah..and slaw. Slaw goes good with anything.

    I like to use thermal bags for resting meat. They are so cheap they are almost disposable. I pop the meat in the bag and wrap the bag in a towel. You can find thermal bags at the grocery store. If I'm at Dollartree I pick up a few. I'm sure they are the same bags, since they look just the same...
