Bored out the holes in the charcoal pan to get more air, worked great, held good temp, almost set it and forget it. Got two and a half hours at 240 with some apple wood to smoke a couple tenderloins, good stuff![/IMG][/IMG][/IMG]
Not as good as expected, great flavor, just not fall off the bone. I had trouble getting the temps up to 225 for the first 2+ hours. I did a couple of mods to the ecb and didn't do a test smoke. I eventually figured out my problem and after that the smoker rocked and held a solid 225. Looking...
Those ribs do look great, your figuring it out. I did ribs as my second cook, smoker hovered around 210 for an average over the entire smoke and they turned out great. I plan on rocking out this modified ecb for a couple years and then buying a weber smokey mountain. I hope by then smoking will...
Cool, I ended up going with 1/2 inch rope and some sealant good to 2000 degrees from the local hardware store. Not sure when I will get another chance to smoke but will keep yall updated. Might do a tenderloin sunday.
I like your design, just don't know if I want legs on my smoker, wanna keep it compact so I can haul it down the river when multiday rafting or throw it in the truck when camping. If I don't use legs it will be easier for the unit to nest inside itself when traveling.
