Temps too High in WSM - Can't Get Them Down
I also agree with too much hot coals. I had the same problem. Another thing to check is the air vent dampers. Two of mine are a little loose and letting in too much air.- 2007flstc

Residue in my WSM
My WSM is doing the exact same thing. When I cook with an empty water pan I don't see that buildup. It's almost like some mixture of condensated water and ash. When you are done cooking do you close all the vents or do you leave the top vent open? When I am done I close all the vents...- 2007flstc
