    which casing to purchanse

    Started off buying from local butcher when 1st started with this addiction. Tried both sleeved & not, definitely easier with sleeve, but increases the cost. Have been buying my hanks from LEM & haven’t had any issues. Rinse & soak casings, you’ll be fine, as they’re packed in salt. Good luck!!

    TSM (the sausage maker), bought a used 5#’r many years ago off eBay, all metal gears & it still works fine today.     I believe your fine, they’re salted & in fridge. That’s how I store mine also, I’ve been having good luck getting my 32mm-35mm hanks from Lem products.

    Chicken sausage basics? Just a few questions

    Have only used thigh meat also, haven’t done chicken in probably 5+yrs. I’m a pork/beef sausage guy. There is an SMF member (cougar, I believe) that I remember reading some of his posts & chicken sausage, that was detailed & informative. Good luck & stay safe!!

    Never tried the sous vide for sausage finishing, they look good & moist. Take mine to 152* also, but in a big pot w/candy thermometer. Takes about 15-20 minutes. So not to much longer. Thanks for the idea...
