I am new to smoking and this forum. I have a MasterBuilt Extra Wide Propane smoker similar to this one. I currently use an old cast iron skillet over the flame as a wood chip box and then a baking pan as a water pan and drip tray directly above it.
Is that a pizza stone? Also can you explain this setup to me. By having a large water pan I'm I using too much moisture?
