I love having these around for lunches. I like to slice them up and eat cold with cheese cubes and hot peppers from the garden. A perfect lunch.
I smoked these on the Pecos offset using post oak. Seasoned with some of my house pork rub and finished with SBR thinned with apple cider vinegar. Gives them a nice zing. Next time I'll do 10 pounds so I can keep more for lunches..... pesky kids ate most of them!
