I don't foil and I don't do the cooler rest either. I'll let it rest 30min-1hr on the counter top just lightly tented with foil because I want that bark to stay intact.

I too have an OKJ Longhorn offset - so far I have smoked three runs of spare ribs. I am wanting to do a Butt next, for pulled pork.
Did you do any modifications? I am going to try raising my fire grate a little , with bolts and nuts. It is hard for me to keep temp for a full 6 hour period when doing ribs, that last hour is tough mainly because of ash buildup choking the fire. Guess I should get a metal bucket as well, so I can scrape hot ashes out into it as the hours tick by...
Just did 9 pound butt first time without foil and there was a wonderful bark and the meat was juicy doubt I'll wrap ever again.
Thanks for that, very helpful. I have had a charcoal basked on order with Horizon, since June. I called last week, and the info I was given was it should ship early this week. No shipping info yet, so I kind of doubt it. I do wish I would get it sooner rather than later. I would love to be able to hold heat for 5 hours or so, that would be awesome.The only mods I did was a charcoal basket (Big Help) & extended the exhaust to grate level.
I can get 6-7hrs of burn time with that basket. That basket works so well that the next issue you might run into is not letting the temp get too high.
The Oklahoma Joe has great air flow, but be careful with high heat. It could burn you meat. Even with the intake vent shut it will hold a 275 at grate level for around 5hrs.
I use Oak wood with all my meat. Turns out
great (pork, beef, chicken, lamb).
My buddy has the Bradley and now he wants an Oaklahoma Joe...hahaha! He saids he doesn't get that grill taste with Bradley. Basically, it's an oven that adds smoke. F### that!

Thanks for that, I was almost at that point - I called Horizon again today, and was told they were going to ship today via Fed Ex to arrive to me on Friday, in time for my smoke this weekend. Keeping my fingers crossed.Just make one like I did. Cost me $20 to make...no welding either. Buy some 3/4 expanded metal and bend it yourself. Use some wire ties to hold it together
