Ok so I tried something by creating a different slant on a stuffed pork loin wrapped in bacon.
Q'd on the webber at 425f for 1 hour then dropped temp to 375f for 45 min. It reached 160f. Should have pulled it at 150f as it was a little dryer than I liked.
Not a expert on the butterflying of loin but did ok. Could not do a weave (unless someone knows how to extend them) so tied (hey still working on that part too).
Stuffed with granny smith apples chopped up, wedges of sharp cheddar cheese, and chopped pine nuts.
Served with sauteed spinach (in lemon juice and sprinkle of salt),rice a roni type rice.

Awesome looking meal there better butterfly then I would probably do. Pork is consider done at 145 at todays USDA standard.
