My wife spotted these at a local butcher and picked them up for me to smoke this weekend. I'm used to smoking beef back ribs but these look a bit different. They are also much larger. Almost like short ribs that haven't been cut. Would appreciate any guidance as to what they are and if they require a different method than ribs typically do. Note that the picture is of two slabs on top of each other.
