I am hosting a veterans bbq here this weekend.

I am expecting 21-30. 21 rsvp’d and 9 maybes. Plus myself.

2 - 15 lb Packer Briskets
10 racks of ribs
Refrigerated Mashed Potatoes
Fruit salad
Watermelon
Potato Salad
Banana Cream Pie
Cheesecake
Chocolate Cupcakes

And whatever other sides and desserts the guests bring.

2 packers won’t fit on my smoker and they suffocate the fire anyhow even if you cut them in half.

But cutting them in half allows them to smoke much faster. So I started about 7 pm last night. One half on the top rack and the other on the bottom. 8 hrs 32 mins on the smoker. 1 hr in the oven. Pulled them from the oven at 202° IT respectively. Both halves thrown in turkey bags, then wrapped in thick towels and tossed in the cooler.

Second brisket just went on a little over an hour ago.

My friends Dwayne and Ingrid will be here with their stick burner smoker to do the ribs at about 10 am.

We plan to eat around 5 pm.
