To use water or not to use water?

Hi All,

I'm smoking my first tri tip, Do I use water in the pan or smoke it dry?  Also, wet or dry chips? I have a MB electric smoker.

  Hi Renee, I use a pan of warm/hot water when I smoke beef, I use a flame in my smoker not elec. It can regulate heat control hot spots and humidity for even cooking. There are lots of good reasons to while smoking. So I would use water pan.  I don't use it for sausages.

I use the water pan in all my smokers, except the MES.

For that I run the smoker with a dry pan.

The MES is so well insulated it gets too much moisture inside with water in the pan.

Dry wood always here too.
