only thing I can think of for a quick fix.. would be to run to Walmart real quick (if possible).. and buy a cheap instant read.. better than nothing ...
What you can do is re heat the summer sausage and take it to 160 IT or place it in 180 degree water and take it to 160 IT. I recommend doing it in the smoker. Ive seen summer sausage not look right in the center when its put in hot water to finish
