SV/CI Lengua Tacos!!

Hey all, had a craving for some tacos but wanted to try something new. Doing some research on different things to use for tacos and ended up deciding on lengua… we had a beef tongue in the freezer that needed used up!

Anyway, here we go! Took the tongue and sliced down the center so the meat could soak up some of the seasoning! Seasoned with some Frag Out Husky taco seasoning and a couple pinches of Posole seasoning! Also tossed in a couple chipotles in adobo sauce and a few tablespoons of diced pablanos! Put in the SV for 24 hours at 165*

While waiting, made up a couple batches of salsa verde! For the wife and daughter, oven roasted some tomatillos, sweet peppers, a white onion and some garlic cloves! Same for the son and I other than replaced a couple sweet peppers with a couple jalapeños!

Oven roasted at 400* for 25 minutes, here’s what we ended up with!

So after a few hours, figured a snack was in order!

After 24 hours, pulled out of SV and let cool a bit and peeled the outer tough skin off and the chunks of fat that I left on for flavoring!

Diced up one half of the tongue and hit with a bit of the Frag Out Husky taco seasoning!

Put a couple tablespoons of EVOO in the CI skillet to crisp up the diced meat just a bit!

Put the CI on low to keep the meat warm, crumbled up some Queso Fresco cheese, diced up some cilantro and some lime wedges!

So, out come the yellow corn tortillas, the salsa verde.. time to plate up!

Well, we will for sure do these again… Everyone went back for seconds! Was a nice change up!

KILLER looking tacos, Cali being little Mexico, we have tons of amazing Mexican food joints and markets that have tortilla factories and small restaurants in them. I eat Mexican at least twice a week, whether I make it or we eat out. Have you ever made corn or flour tortillas at home? If not, you should check it out some time, they are addictive as hell.

Wow! That is killer! I grew up with it on sandwiches, but I don’t know if I can get my kids to try tongue, I think your way they would actually do it! That is awesome, perfect tacos!

Holy cow tounge!!!... Those came out great Justin!!. All the flavors I like too!.. Im gonna have to give the salsa a try soon! You've been eatting good over there!!

Beautiful Justin!! Excellent job and the SV patience paid off. I've never had tongue before and with Tracy around it isn't likely I'll get to cook it unfortunately. If however I was at your house and you put a meal like that in front of me everybody best look out!! I'm going for broke so stay out of my way :emoji_laughing:

nice work. The pealing of the tongue is absolutely key. That is some fantastic eats right there. Just excellent. Big like.

Thank you Dan, much appreciated… we enjoyed them! Sounds like great food down your way whether out or at home!

Ya know Dan, I have not… but as much as we enjoy making things as a fam… I’d sure like to look into it! I think you and I chatted a bit about this subject a while ago. I was gonna pursue and then was distracted by some fam stuff! Definitely going to revisit that thought!
