saw a few things while watching the food /cooking shows I saw some cool burger things so I combined them all. no pic this time but the recipe is easy. so i will share what i learned so next time this will be better. the stuffed part isn't that easy :)
for the record these were cooked on the stove. the grill is packed up for the winter. it would be better on the grill :)
you will need hamburger(80/20)
bacon
blue cheese
course ground pepper
course ground sea salt.
cook the bacon(not too crisp, not too soft)
chop bacon fine and mix in hamburger. I figured 2 strips per burger.
make patties about 1/4 to 1/3lb size.
split the patty into too parts.
the key is to make thin patties with these. better big around and flat that short and thick
place blue cheese on one patty. mostly in the center
cover this patty half with the other half of meat
work the edges until they look like a patty.
one the edges are blended tighten the patty in a circle by pushing the edges inward to make a uniform patty.
place a med coat of course sea salt over one side of patty.
on same side place a heavy coating of course crushed peppercorns. I prefer a blend.
optionally add garlic and onion salt (or powder or granulated) to taste.
this will make a nice crust when placed face down.
next time I will document with Pics, I promise. I also saw a spice tip. mix in whole allspice with the peppercorns. 25%. I will try that next time.
the bacon is very subtle in the burger. enough for you taste buds to say hmmm. something else is there. it's not dominating like a slice of bacon on top.
although I have yet to try it, I saw this one where they used a burger ring. fulled the bottom with bacon pieces, 1/8 inch. put blue cheese on top the filled in the form with ground beef. placed bacon side down on a flattop grill. probably a dominate bacon taste.
well enough babbling, this is well worth a try if you want to up the burgers a little.
