I built a backyard offset smoker and trying to find a smoker cover. Received a few quotes but might do myself. What is the best material to make it from?
 
I would think if you want it to last a long time then waterproof canvas would be the best material.

google "sunbrella" or "sunbrella fabric".

Roll up awning co's and the marine industry use this.
This fabric can be bought by the yard on line or
you may be able to find it at a business that makes
awnings, bimini tops and cushions for boats, or
possibly a RV dealer.
I had a sail cover made for my boat out of sunbrella
fabric. Keep it reasonably clean and it will last for years
