  1. Another rough Monday night in the Santa Cruz mountains... [​IMG]  Low 60's, clear sky full of stars, with a light breeze blowing up the mountain...

    Once again, I find myself rummaging in the home freezer...find a couple of 1-1 1/4lb packages of ground beef buried in the depths... [​IMG]

    Haven't smoked a meatloaf in a long while, last time was back in August, according to my smoking logs... [​IMG]

    So off we go on another sfprankster (mis)adventure... [​IMG]

    Hickory Smoked Meatloaf

    Must have a nice selection of veggies for my meatloaf...

    minced garlic: check

    chopped celery: check

    chopped carrots: check

    chopped mushrooms: check

    chopped smoked onions:check

    ground beef: check

    day old bread cubed: check

    whipped liquid chicken w/milk: check

    salt, fresh cracked black pepper, herbs: check


    ...everyone into the kiddie pool...


    ...shaped onto a perforated pan...

    ...homemade heirloom tomato sauce...



    ...sauce applied... 


    ...ready for the WSM spa treatment...

  2. We're planning on having a salad with our meatloaf...

    A simple, fast way to spruce up your salad...

    Homemade Garlic Croutons

    Chop some day old sourdough into cubes...

    ...using a microplane, grate some fresh garlic into evoo...


    ...add a dash of paprika...

    ...mix and pour over the cubed bread...

    ...toss to coat...


    ...into the toaster to brown...

    Optional: fresh grated parmigiano reggiano and/or chopped parsley

  3. Hour and a half in the hickory smoke @ 260-265*...

    First check of Internal temperature: 132* 

    Target internal temperature: 160*

    Looks like it should be tasty. Now where's the money shot? Meatloaf requires the sliced shot or it didn't happen!

    savoy cabbage: check

    purple cabbage: check

    arugula: check

    romaine lettuce: check

    blue cheese crumbles: check

    homemade blue cheese dressing: check

    homemade garlic croutons: check

    carrot sticks: check


    ...pulled at 160* internal temperature and rested for 30 minutes...

    ...money shot or it didn't happen... [​IMG]

    ...oooooooops... [​IMG]

    Oh it happened... [​IMG]


    Once again, we're roughin' it in the Santa Cruz mountains, sfprankster style... [​IMG]

    Looks great to me sfprankster!   That salad and description makes me drool almost as much as your loaf does.

    I've only done meatloaves in smoker once, and they turned out awesome too.  I made 3 of them at once.  On agenda soon.

    Its been awhile since I smoked a meatloaf. For the great tasting results, they're easy and quick, which is right up my alley. [​IMG]  

    One of the advantages of living in CA, is the year round, fresh produce.

    Some of us like to eat the green stuff too. [​IMG]

    That looks like I would eat it,if it didn't have the onions in it.Did you use any of them garlic croutons in it?

    What really impresses me is your ability to take pics while you're stirring the food.   GoPro  helmet with foot activated trigger ?    Very impressive indeed.  No wonder your foods look so good [​IMG]

    In my head, everyone remains an apprentice of cooking for their entire life. Having no classical training myself, I'm still learning/testing new techniques and methods with every meal I prepare. There's always something new on the horizon to learn. For me, it will soon be sausage making. 

    This is just my personal style of cooking. I try to make everything as simple and quickly as possible, from fresh and seasonal ingredients. By making it look easy, hopefully, it may give someone the initial confidence to try and replicate the meals. 

    Mostly, it's about having fun creating the meals you enjoy!!!

    No croutons into the meatloaf. Definitely a new idea to try in the next meatloaf. [​IMG]

    Sometimes it's a cheap, bendable tripod and using the 10 second timer on the camera... [​IMG]

    Other times, it's holding the camera in my mouth and using my tongue to focus and shoot... [​IMG]

    Once in awhile, it's my gf's hands, doing the dirty work, while I stand back and shoot... [​IMG]  

    Or lastly, it's me solo, with one hand in the pot and the other attempting to take pictures... [​IMG]
