One question though - are they any more/less easier to peel when finished? Sometimes my grubby little mitts have the darnedest time separating the shell from finished boiled egg!
Easiest way to peel a boiled egg is to plop it in ice water as soon as it's done boiling/smoking. Not sure what it is that the cold water does to them, but they are a million times easier to peel after they've been put in ice water. I used to have the same problem that you have.
My Mom always said, the more cracks in the Egg, the easier it is to peel. Therefore I roll the Egg until it is one BIG crack,sometimes it comes apart but that's when I get TOO rough.
Seriously, it comes off easy like that.
Try pickling some,they are good.Cired Vinegar,sugar,a little Clove and heat to dissolve mixture. Set for 3-4 days and -GREAT
