  1. Good morning! My name's Rob. I just picked up a Master Forge vertical charcoal smoker and set it up yesterday. After I get off work this morning, I will be firing it up to cure, then getting everything together for a weekend of football, beer, and smoked meats. I am originally from Texas and moved away with the military at 17. I've been bbq'ing my whole life, but this is my first jump into smoking. I am very excited. When I was setting up my new smoker, I went ahead and added a second thermometer with rtv sealant, drilled out the charcoal pan to add bolts into it to hold up a 13.5" grill for better airflow, I ordered a Weber replacement kit of air dampers I'm going to add to the lid and the base (I'm covering the original intake hole), and I am stopping by the fireplace shop on the way home for some fiberglass rope to seal the lid.

    I picked up some lump charcoal and cherry for a pork shoulder I'm going to start the weekend with. I'm going to track down some hickory for some beef and then finish off the weekend with some chicken breasts using applewood. By Monday, I should have a pretty good handle on what I need to do to get a good smoke going with it, and it should get easier when the new vents show up. I believe I've modified it in a useful way.   9. Well, I spent all day yesterday riding horses, so had no time to cure the smoker. I'm doing that at the moment and have already learned a couple of things.

    First off, I am glad I ordered the air dampers from Weber. I lit it off a couple of hours ago to cure with some old charcoal I had. I put some charcoal on the grate, then dumped my charcoal chimney off in the middle of it. At first, the temperature went to 600F and climbing so I quickly added water to the water pan. I wasn't going to do this initially for the curing, but I also didn't want to melt my smoker. The temps immediately fell to 400F on both thermometers and has been steady there for almost two hours now. Obviously, I'd like to get this a couple hundred degrees low, so I will block off the existing open hole in the bottom of the pit, add two of the dampers there, then add one on the top where the lid is molded more flat. I believe this will give me near indefinite adjustability of the temperature for any time of cooking I'd like to do on it.

    The second thing is that the smoker did not like the 600F because the paint started bubbling at the bottom pretty bad. I'll take it all apart after this, sand it down, and then repaint with hi temp paint.

    Anywho, off to check temps again!
