Picked up a two pack of Turkey legs from the local meat shop yesterday. They weigh over two pounds each! Was basically going to smoke em and use the meat for lunches, etc this week...
Opted to go without brining them, though I did marinate according to a recipe I found. A little worchister and oil, then rubbed with a blend of salt, pepper, brown sugar, onion powder, and cayenne.
They just went on the smoker, so we'll see how things go!
