What is everyone's thoughts on prime rib? What is everyone's tricks, hints, or just favorite way to smoke it?
Prime rib is excellent smoked. I really like using cherry and pecan wood. We like ours on the rare side so we take it to 125-130. Pull it off the smoker tent with foil and let it rest for 45 min. Then slice. Smokey Au Jus is good too. Look at Chef JJ's thread for that.
