Making my apple, onion and celery filler for the stuffing for the pork loin. Butterflied my pork loin pretty even throughout, after cutting the fat cap off. Made my bacon weave and seasoned it. Laid my stuffing out onto my pork loin and spread it pretty evenly. Wrapped up my loin. Added the loin to the bacon weave and prepared to wrap it up. Wrapped the loin up in the bacon. Seasoned the bacon some more before putting the bacon wrapped loin in saran wrap to get the ends nice and tight. And for some Qview of the spare rib (left) and baby back to the (right).
