IT is at 187 with a hour and 26 minutes left should I drop the temp if so how much have it ok 225

The meat will hold its temp for plenty of time once you take it off. I would let it keep getting up past 195 at least.

You should cook it till the bone wants to slide out with a light tug.
Average 195'-205' IME.

Bagged and in simmering water, Crock Pot on high , Foil covered Pan, with some finishing sauce , at 325, all work well..JJ
