I just fininshed 10lbs of snack sticks using High Mountain Pepperoni mix. One think I did not do was a ice bath to cool them and I wish I would have

They would have turned out much better. Here are a few pictures.

I made some short and some long, some full some less full to see what worked. This is my first try at this and I wanted to do some testing.

They sure look pretty, wouldn't turn my nose up at them if you offered

I liked the pic of the couple of fatties in there too.
 
They were awesome!



They stayed nice and full due to cook temps IMHO.


Next time start @ 100 for an hour no/little smoke then 3 hrs of smoke @ 100-120 then finish for an hour @ 170-80 until internal temps are up. They will dry out and shrink juuuuust fine.


IF you are not satisfied with them I will take ALL of them off your hands for you.

I will let HOSS chime in .... but is ANYTHING around that place stock?




IIRC he was smoking these @ the same time as the fatty's.. I think his temps on these were 225 give or take.
 
I have read in different post about the rapid cooling after taking them out of the smoker. What does this do, does it cause them to be firmer, or does it have something to do with the casing?

for the job. And I to want to know how your getting smoke at such low temps in the GOSM.
 
As far as the smoker goes when I first got my Cabela's Premium Vertical Smoker I had a problem with the burner it would only run a nasty orange flame and would not clean up. I tore it apart and put on a new regulator and thast did no good either so I called them up to see about getting a new burner (I did NOT want to put that thing back in the box!!!!!!!!) or drive 2 hours to return it. They were willing to do whatever I wanted to help out

I then got tired of waiting (I have a turkey to smoke for Thanksgiving) and returned it for a new one. One thing I notices was another one just like it at the return area

kinda made me worry what I had gotten into. SOOOOOO I get the new one home put it together and the SAME thing happens. Now I am bummed........... A couple days later a new burner arrives from Cabelas and it looks a lot different from the hose off the tank to the burner itself and I swap it out and TADA!!!!!!!! It works great, I can turn it down as low as I want and it will go to 250* easy

As far as the cold water bath I hear it helps keep the casings tight and the final product turned out great. They taste awesome!!!!
 
The ice bath, or the cold water shower, would have put a quick stop to the cooking process. I don't know that it would have necessarily changed the taste, but it may have kept your sticks a little bit more moist. Rinsing the sticks with cold water is kind of cosmetic thing. The biggest thing that it does is keep the sticks fom "shriveling up", but they look fine to me. Good job.
 
Cold water baths or shower are for shrinkage not much to do with taste...Those look great. I need to make some of those bad boys. How did the smoke fat do at the higher temps. Just curious for when i do them.
