Found the SM and SMF last week and have been trying to gain as much info as I can.
I have had a ECB for a couple of years and wish I had found you guys long ago. I just modded it with 4 one inch holes in the fire pan (before SM) and a better thermometer. Smoked some chicken and hot Italian sausages yesterday that both great (charcoal and apple wood).
