New to smoking

Hello everyone. I am living in Rochester, NY at the moment and bought a Masterbuilt 31.9-in 800-Watt Electric Vertical Smoker a couple months ago. So far I have made some wings (not so good), and some mild Italian sausage (pretty good). I am in the U.S. Coast Guard so I will be moving around a lot. I have always wanted to learn to smoke the conventional way but I do not have the room for a conventional smoker so I decided to begin with electric.

The only issue I have so far is the uneven smoke output of this model. It seems to smoke well for about 5 minutes then begins to slow down until I can not see anything coming out at all. I have chocked this up to inexperience. If I can not get more consistent smoke I will get a AMNPS and try that.

I look forward to learning a lot from the experience in these forums and hopefully one day I will be able to contribute. Thanks
 
Lil Tom, welcome to SMF!  Glad you are here and thank you for your service! 

There are a ton of folks here with the MES so any questions you have can be quickly answered.  The AMNPS is a great addition to your smoker arsenal and should eliminate your smoke issues.
