Hi - I'm a new guy. I think I'll be using this forum quite a bit to help get me started.
Just bought a 30" Masterbuilt Electric Smoker (see, I've already learned that it's referred to as MES) and tried it yesterday for the first time for baby back ribs. I followed the recipe that came with the smoker -- basically 4 1/2 hours at 225. While the ribs were tender, they were nowhere smoky enough. I couldn't seem to get the chips to start smoking. What am I doing wrong? Could it be that I didn't place the smoker tray properly? I was able to load it fine, but every time I checked the chips, they were just sitting there in the tray, uncharred, with no smoke. Temperature was fine.
BTW, when I pre-seasoned it per the instructions at 275, same thing - almost no smoke and the chips never turned to ash.
