Smart and Final had a sell on piggy, so i took it home. I used mesquite bbq light pellets. The seasoning i picked was meat church honey hog and a dusting of their honey hog "hot". I smoked at the temperature of 225 on my green mountain grill. I usually wrap in tin foil but decided to try something different. I set the piggy in one of those aluminum party trays and wrapped tin foil over it. But before i did i added a mixture of apple juice and soy sauce for little juice. I tossed it back on the smoker and pulled it at 205-206?.. it basically fell apart as i pulled the bone out. I shredded it and added more honey hog seasoning and gave it a good tossing.
