I currently have a WSM and am now looking at getting an offset to increase capacity and the amount I can smoke at a time. I am interested in the 20" series due to their efficiency, but don't know if the cross flow technology takes away from the offset flavor I've always been searching for in my smoking adventures. Does anybody have any experience with tasting food from both smokers? I just don't want to get the 20" if it is not the true offset flavor. I appreciate any help with this.
