I've been smoking meat for about 5 years, Im confident in my recipes and techniques but, as I expand my the size of my cooks, I have began building a smoker, im to the point where all I need to do is build my racks, cut the hole from the fb to the cc , install the plate for reverse flow, and determine stack size and style... Which is what brought me here... My firebox is large 24x30x20 deep, I want to be able to grill steaks and such as well, I will have a have a half moon opening into the 65 gal(i think) cooking chamber ( its 60" x 20") . Im going to look around a bit and look for some answers and such before asking anything. Glad to be here and look forward to sharing ideas and recieving input !
