Hello Everybody,
My name is Nick and I'm coming to you from Bush, LA....about 50 miles north of New Orleans. Beautiful country down here. I have 6 acres out here and love to cook, especially outdoors. I owned a lil restuarant years ago but didn't know what I was getting into. Just knowing how to cook doesn't cut it. That's the easy part. It was the hardest job I have ever had in my life. I took a hobby and turned it into a job. Not a good thing. Anyway, these days, I cook just for the fun of it for family and friends. Everybody raves and my Jambalaya, Italian Olive Salad/Muffaletta's, Boiled and Fried Seafood, and Outdoor Grilling....but what I REALLY wanna learn how to do is BBQ...the right way! My ribs are tasty by doing them slow in the oven and then finishing them on a grill but I want to learn how to smoke them...the way it suppossed to be. I'm currently building a "BigBaby" smoker. Ive researched a lot of sites and I think I got a handle on constructing it. When it's finished, I'll definitely post some pics. In the meantime, I'd really appreciate any input, tips, tricks, etc. on both the BigBaby and smoking in general. I'd like to do ribs, pork butt, and brisket with the smoker. I have a decent rub recipe but I am going to purchase Jeff's rub and sauce recipe's and give them a try. I'm sure they're great.
