Flank steak.

Afternoon folks!
A few days ago I got the urge to have flank steak. And, while poking around the store I found a nice looking 2 pounder.
Sunday I decided to cook that bad boy up! The weather was nasty. Rain and high winds. So the prep got changed.
Sunday morning I got it marinading with:
1/2 cup olive oil
1/3 cup reduced sodium soy sauce
1/4 cup balsamic vinegar
2 tablespoons lemon juice
2 tablespoons brown sugar
1 1/2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 TBS each onion powder, garlic powder
1 tsp each paprika, pepper, red pepper flakes, dried dill weed
Threw it all in a zip lock bag with the flank steak. And let it sit in the fridge for 8 hours. Flipping whenever I roamed into the kitchen for something.
And got out the Ooni grizzler. And got it smoking hot on the stove top.

About 2 minutes per side. Then into the broiler for about 8 minutes. Got it 135 IT. And pulled it out to rest.

Plated with oven roasted brussel sprouts with bacon and red onion and mashed taters with beef gravy. Cheated on that. It was store bought.

Cut against the grain. Absolutely delicious!

No way is that 145°, has to be a typo.
I was just about disappointed, then very pleasantly surprised to see it med- rare.
Beautiful char in those grill marks and on the edges... Screams eat me

I'm waiting for Flank to come down in price a bit .

Was wondering about the mess in the Pizza oven . Solo is starting to come out with that stuff .
I've used it in the Ooni for steaks. Gives them a great char.
