Today, I have started my first smoke on my MES 30. I am using apple wood chips for this smoke. I started out the smoke by preheating the MES to 240, then I dropped the temp to 230. Now, about 2 hours in and I have just sprayed the butt with an apple juice/rum mixture. I applied a rub last night and vacuum sealed the bag (as my plastic wrap was giving me a fit).
