Hello fellow smokers of the wood.
I know we all love pics of what people are smoking.
So for your enjoyment here we go! Hang on tight!
Using a couple of hickory chunks for smoke.

Hi Jim,
I always wanted to go to MS when I lived in Crestview, FL.
Thank you Sir and I do miss the souths way of acknowledging people.
Keeps everyone humble. We live in the freedom capital of the whole world.
Simple is good and that's how I look at bbq. Clean smoke, good meat and a little patience and it will be alright. A little bourbon and nice tunes make the smell of the cook all the better.

Added the second chunk of hickory.
Man, what's is better than this?
Maybe the sight of our flag flying high in a cool breeze.

Is that the 24in Weber? Does the extra 2in make that big a difference over the 22in.
And dang! That last video gets the old heart beating fast!

The smell of clean smoke and the temps a close second. I'm at 287 now.
No visible smoke. The smell we all know and love is clean,.
It is so nice to be able to buy what we want and enjoy life as we please.
Freedom, how we have forgotten what it cost.
I know you have smelled clean smoke and how bbq is supposed to be.
It's gotten me through sometimes in my life and what I am smelling tonight.
Cool song to keep you going!

I know right. In 1996 when I saw the movie Platoon. The tears I couldn't control. The emotion for those boys and what they survived was a lot to feel.
It's a 20" Weber kettle.

You know we forget sometimes how good we have it here in America.
Land of the free.
But freedom has a cost.
We all must carry our share of what it takes to keep us free!
I had a family member from Italy ask why so many American flags fly on our homes.
My mom, who is very religious said "Unless you are an American, you will never understand".

They are a pretty thin rack of ribs.
I'm going to wrap them for a half hour in butter, brown sugar and honey with a little maple syrup a dash of rub and then glaze them with a nice sauce.

Used some Orange Blossom Honey I bought on a trip to see my brother in Orlando, FL.
Nice hint of citrus taste to it!
Internal temp was 180 degrees.
 
Made some coleslaw from a video from Meat Church.
I made some last time I smoked pulled pork.
Very good stuff!
