Building a fatty...

  1. Went to the store tonight and they had some Italian sausage on sale...I just couldn't resist. The boss was home to document the play by play.

    ..topped with roasted peppers, poblano, red and jalapeno...


    ...gotta have some cheese. Cheddar this go around.


    ...rollin it up.


    ...profile view.


    ...building a bacon weave



    ...putting it all together.


    ...the final twist...nice n tight.


    She's a resting in the fridge now, gonna go on the smoker tomorrow. [​IMG]

    This one should really open up your taste buds alright. Looks good nice tutoral on the rolling process and weave. Cann't wait for the finished product.

    That was a nice job filling, bacon weave making and rolling. Are you an artist because that looked like a beautiful painting.
     
  9. It cooked at around 275* for an hour and a half. Reached 165* internal temp. Cooked up a pan of beans while I was at it. Just some store bought baked beans with some extra goodies flavor them up some.



    ...the lunch spread.


    edit: for the beans, I fried a couple of slices of bacon, with chopped onion and jalapeno. Added a little molasses and jalapeno jelly. Initial taste testing was very positive...

    Haven't cut into the fatty yet....it just looks so good sitting there. [​IMG]

    I also smoked a small 2 pound round roast, it's resting in a cooler right now.
