I have always done my briskets on a pellet smoker at 225* with good results. Want to do one on a drum smoker at 275* maybe a 14 lb packer how long do you think it will take per pound?
Dutch has a sticky in this forum about a basic brisket smoke. I used it...worked good for me. Since you have done them before..probably do the same thing. Go for the IT not the time. Sorry I cant give you a better answer.
I have not heard of the UDS cooking any faster or slower. I did a cook last month In my Char Griller that was 250-275 range and it was about a 1 hr per pound, then rested for 45 min before slicing.
