I had a lot of fun with the latest throwdown. I even got a few votes!
I started with a pork loin rubbed with 1/2 cup brown sugar & 1/4 cup kosher salt wrapped overnight.
Next day I cut a slit in the middle, filled with crushed pineapple and tied
Into the smoker it went. While that was going on carrots got into the Sous Vide for a couple hours with brown sugar and butter.
Some tiny potatoes were boiled.
While that was going on the chutney was made;
3/4 cup dry white wine
1/2 cup diced dried Apricots
1/2 cup dried Cherries
1/4 cup white wine vinegar
3 tbsp water
3 tbsp brown sugar
1 minced Shallot
2 tbsp grated Ginger
1 tbsp butter
1 tbsp Dijon
1 1/2 tsp dry Mustard
Simmer everything but the butter, Dijon and dry Mustard and add them when the fruit is softened.
The loin was brought in at 145IT to slice.
The Carrots were dumped into a pan straight from the bag (minus the rocks) to glaze.
Meanwhile Cucumbers & Onions were cut up & tossed with a little vinaigrette.
Some Cornbread muffins on the side rounded it out. The Pineapple didn't really add much flavor, but kept the loin moist. The chutney was the kicker [emoji]128578[/emoji]
