So I’m confused. I preheated my MES 30 to 250* for pork butt. ThermoPro said it’s 268 inside. I put my pork butt in and now the ambient temperature says 230. Do I need to raise the temp to get the ambient to 250 or do I just let it be?

Well I bumped it up a little and now it back at temp. I guess I just needed to give it time.
 
Set it and Forget it...Unless you are doing a short, <60 minute, smoke. The MES will get back to your set point relatively quickly. Over the course of a 6, 10, 15 hour smoke, the MES is likely to swing 25°+/- of your setpoint but the AVERAGE temp is what's important over the cook time. Start fussing with the temp and you will be chasing your desired temp all night. All that aggravation will have Zero impact on the Quality of the cook...JJ
