Our local restaurant supply, Cash and Carry has Pork Lon on sale.
Bought a few. Chunked them up into quarters. Trimmed the fat a bit.
Packed up 16 hunks for later. Ended up with three packs of fat that i’ll Use for sausage making.
4 hunks dry brining for Canadian bacon.
