Our local restaurant supply, Cash and Carry has Pork Lon on sale.

Bought a few. Chunked them up into quarters. Trimmed the fat a bit.

Packed up 16 hunks for later. Ended up with three packs of fat that i’ll Use for sausage making.

Great start Case!
I just picked up a loin yesterday.
I was going to just smoke it, but may cut it in half & make some CB too!

I'm going to pick up another loin before the sale goes off for Thai pork jerky. Good stuff!
