Just trying out the making sausage routine. Read several books.Bought a 3.5 lb butt.
Chopped into small chunks. Near frozen. Ran thru the kitchenaid grinder using the larger hole plate.
Followed Pops recipe for breakfast sausage and his most helpful weight tables.
Mixed it up several times. Then back thru the kitchenaid small hole plate.Made a small test patty and it was quite nice .
The Woman liked it. She usually sez AAACCCK! TOO SPICEY!!!!!. Not this time. This is mild and tasty.
Packaged two one pound containers. One for gravy tomorrow and the other for my first fattie this week. the rest
was made in to patties and will be gone quickly.
I am very happy with the whole deal. Will try a hotter version next and then start looking at andouille recipes.
