a cheap newbie here....picked up a Smokehouse Big Chief at a garage sale -complete except for user manual. Would love some advice on temp and time and best wood for smoking pork butt for good old fashioned E N Carolina pulled pork

also, can baked beans be slowcooked in smoker?

welcome to SMF!!!   Most everyone here smokes to temps. i like to use fruit woods on pork

figure 1.5 to 1.75 hrs per lb. is a good guess.

 Go to the pork section and you can read all about pork butts also while there look for dutch's wicked beans . great for the smoker.

First off Welcome Silver to SMF. you'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

thanks for the welcome and information, will check out e-course. been thinking about getting a smoker for a while and when I tripped over one for just $5 couldn't help buying it. Will check out the e-course.

I now download all the manuals for everything I buy and keep them in a " Manuals " folder

smoked some chicken today. used hickory as my wood and smoked the chicken for a good couple hours. I liked it but the kids said it was too smokey so next time I will shorten the smoke time and finish up in the oven. Also decided to try apple wood next time to see what flavor is added. Love the smoker and think that we will get lots of use from it.

Welcom Silver!

Eman had the best suggestions for your pulled pork smoke.  Look in the pork section and follow the "sticky" at the top which explains it very well.  I take my pork butts to an internal temp between 200-205 with delicous results.

Dutch's wicked beans are the best in town.  Once you make them your friends and family will demand them everytime.

Good luck with all your smokes and don't hesitate to ask any questions.

I'vw had the same problem with beer can chicken using hickory for smoke. Apple wood is perfect for chicken you and the kids will love it.
