New to the forum and to smoking

I am new to smoking meats and am starting out with a new Charbroil American Gourmet Delux offset smoker. I have some apple and cherry wood being sent to me for my smoking wood and will probably smoke pork and poultry more than anything. I love to grill and according to everyone who has tried anything I grill I am very good at it. SO I guess I am asking for equipment tips, brining tips and some begginer smoking tips. Thanks

First off Welcome Gator to SMF. you'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

I have been reading about the smoker I wanted to get and it doesn't seem as if it gets many good reviews. The last thing I want to do is by a smoker, have to add tons of mods to it and then it rusts out on me in a year or so. With that I think I have about decided to get the Weber Smokey Mountain Cooker with a 22.5" surface. Weber has always been a great grill for me so I can't imagine their smoker being a bad product. I am also going to purchase the digital internal meat thermometer with long leads so I don't have to keep opening the lid to check the meat. Do any of you use the thick rubber gloves I see and read about? There is a ton of things to learn about smoking so it looks like I have a ton of reading and experimenting to do.

1st off ,Welcome to SMF!

 alot of us use gloves of one type or another to prep and also for handling hot smokes.

 There are alot of wsw owners here and you should be able to get most any question answered.

Well I got my smoker (WSM 22.5) and my wood ( cherry and apple ) ordered so it should be at my house by the time I get home from China (business). I am really loving this site and have learned a lot from reading old threads about different woods, etc. I have a feeling I have found a new smoking family.
