I have an event coming up in a couple weeks, can I pre make the ABT's and freeze them for a couple weeks THAN smoke them? I will be making several dozen or more and I would like to make them in small batches ahead of time so I don't have to make them all at once.

I did a search but only found freezing after smoking them.

I don't know but I would really like to know. Now I don't think so because the freezing would mess with the texture of the meat you know soften it I think. But I'll have to check back in later to see if one of the great powers here comes and answers this one.

Freezing fresh japs will not give you the same texture as when they are done when fresh. No type of chile will maintain texture after being frozen. This is not to say that they would be bad, just saying they will not be the same. Good luck my friend.
