Alright...they're an hour and half into smoking. I finally got what IMO is the "perfect" smoke on my Brinkman vertical gas smoker. TBS and just smells outstanding!

Babyback ribs are the reason I bought a smoker. It's always been my favorite meat to grill over a low heat, and this will definitely be better...I hope.

So...they're prepped with a little Salt Lick rub, and in the smoker. I'll snap a photo before foiling. I'm going to try the 2-2-1 method.

Oh yeah....I'm going to throw a little chicken sausage on there for later in the week. :)

It's a bit cold and rainy...smoker on the side of the house to keep outta rain.

Great pictures BTW. What lens are you using on your 5D? I'm using a Nikon D300 and am thinking about switching over to Canon.
 
I'm using an 85mm f/1.8. I have no rhyme or reason why I chose Canon over Nikon. They're both capable, and have pluses and minuses. The 85mm is my favorite lens and perfect on a full frame.

I like it. It has some "kick" to it, so it needs to be applied sparingly if you don't want too much heat. It then goes good with both sweeter and vinegar based sauces if you want to use sauce.
