Chris Meredith , form Portland Oregon. I am an engineer @ Intel Corp, I spend my weekends fiddling around with anything that creates Smoke(Diesel Trucks, Pyrotechnics, Smoking Foods, and the Boy Scouts).
I have a New Braunsfels Smoker, Brinkman Water Smoker and a Enviro Bistro Gas Grill. I would like to believe i am an Adept smoker, I have smoked all types of food including making my own Chipotle peppers. I once got warned by the condo management (Living in Westboro Mass at the time) that i couldn't use my grill when there was 24" of snow on the ground. I believe that cooking over Charcoal is a year round event, not just for the summer time I make my own charcoal to help with the seasoning of foods and other hobbies of mine.
I am always looking for new ways to cook food, and am always willing to try new options

Good Morning Chris. Welcome from another PNW'er. There will be some familiar faces popping in as well. Looks like it's going to be a great weekend to show everyone that smokin' in the Pacific NorthWest is an all-weather event.
