my smoker is under construction, so im having to grill these chicken pieces (not whole).tomorrow .and i aint got a clue ....do i rub ,marinate,lather with sauce im lost ...i need that" WOW FACTOR" all ideas welcome
 
Try this. This is one of my favorites though I usually use a whole chicken,
Beer Brined Chicken
4 to 6 lb chicken
2TBS extra virgin olive oil

Brine
4 cups hot water
3/4C Kosher Salt
3/C Dark Brown Sugar
1tbls Black pepper
6 Bay Leaves crumbled
24 oz of Beer
ice cubes
cold water

combine hot water,salt,brown sugar,black pepper and bay leaves, bring to a boil and stir until all the salt is dissolved.
add ice cubes to get the brine down to 40 degrees .

In a 1 gal zip lock bag add the cooled brine along with the chicken. Add the beer and enough cold water to completely cover the chicken.
Put in the refrigerator or ice chest for 4 hours, keeping the temp at 40 or below.

After 4 hours remove the chick, rinse off the brine and pat dry. rub the olive oil on the chick and apply your favorite rub.
Grill at 350 till the juices run clear.

The rub I use is this
2tsp sweet paprika
1/2tsp ground cumming
1/2tsp kosher salt
1/2tsp dark brown sugar
1/4 tsp celery salt
1/4 tsp chili powder
1/4tsp black pepper
pinch of dried oregano
