Well done brisket

The wife is thawing out a brisket that I had smoked some time ago. On it she had written "well done brisket". Now assuming this may translate to "dry brisket", what might my options be to "juice it up" to serve to family and friends on Christmas eve? I plan on slicing it for sandwiches.

Maybe she had kind of a dyslexic moment and transposed her words. Perhaps what she really meant to do was compliment your culinary skills by saying "done well".icon_rolleyes.gif

Jus is a good idea, you could even go so far as to make a smoked jus.

Or a nice brisket sauce if you are serving it cold.

Well then your only option is to make some au jus as they had said. Maybe a good gravey would also do it too.

If it's really well done you might revive it with a jus or you could chop it and add either BBQ sauce, Enchilada sauce or salsa.

Not much help for right now but I always throw a whole chicken or 2 on the pit when I'm smoking. I remove the breast meat for future us and use the carcass & the dark meat to make smoked stock which I freeze it quart size batches which I keep on hand for any Q that needs reheating or fresh Q that will sit in chafers for extended periods of time.
